Air Fryer Chicken Fajitas is one of our go-to dinners when we need something fast and healthy. My husband loves this recipe so much, he offers to make it regularly (I tend to cook most dinners because I’m testing recipes, so I appreciate the break!). It’s a balanced meal with perfectly cooked veggies, tender cooked chicken and customizable with your favourite garnishes.

A big benefit from using the air fryer is you avoid heating up the kitchen in hot summer months, but the best part is it’s ready in less than 30 minutes!

Ingredients

Below is an overview of the main ingredients and steps to make this Air Fryer Chicken Fajita recipe. See the recipe card below for all the details!

  • Homemade fajita spice blend – this spice mix is incredibly flavourful and is worth the extra couple minutes to put together yourself (in my humble opinion). Not to worry if you don’t have all these ingredients on hand though – you can use a store-bought fajita packet instead!
  • Chicken breast – boneless, skinless and sliced about half an inch thick
  • Bell peppers – we prefer the sweeter varieties (red, yellow, orange), but green works too. We like the ratio of peppers to chicken using just two bell peppers, but if you want to bump up your veggie intake, you can add a third.
  • Red onion – just a small one, or use half of a larger onion
  • Olive oil – to help the spice blend coat the chicken and vegetables nicely

How to make it

First, mix up the homemade spice blend and preheat your air fryer to 380 °F.

Next, in a large mixing bowl, toss the chicken strips, bell peppers and red onion with the olive oil and spice mix. Transfer this mixture to the pre-heated air fryer basket, making sure it’s in an even layer for even cooking.

Cook for about 15 minutes or until the chicken reaches an internal temperature of 165 °F (I suggest using an instant read thermometer to check!). Be sure to toss halfway through cooking time for more even cooking.

Tips for Success

  • Make your own spice blend. My taste testers (aka my family) agree that my homemade fajita seasoning is better than using a fajita seasoning mix from the store. It packs a more flavourful punch.
  • Don’t overfill the basket. I’m using an extra-large capacity air fryer (a great size for family meals) and I find it’s the perfect amount of space for this recipe. I suggest cooking the fajitas in two batches if you want to double the recipe. If you’re using a smaller capacity air fryer than mine, you may need to add a couple minutes of cook time to account for the reduced air flow.
  • Be mindful of food safety. This may go without saying for many of you, but it’s worth a reminder: use a different utensil for serving than the one you use for tossing the chicken halfway through cooking time. We don’t want cross contamination!

How to garnish chicken fajitas

There’s no right or wrong way to garnish chicken fajitas, but here are some of our favourite toppings:

  • Guacamole
  • Avocado slices
  • Salsa
  • Shredded cheese
  • Sour cream or Greek yogurt
  • Sliced jalapeno
  • Fresh cilantro
  • Lime wedges – squeeze a bit of lime juice over each fajita!
  • Sliced romaine lettuce

Ingredients

For the fajita seasoning

For the filling

  • 1 lb boneless skinless chicken breast, ½-inch sliced
  • 2 bell peppers, sliced
  • 1 small red onion, sliced
  • 2 tablespoons olive oil

For serving

  • small flour tortillas or corn tortillas (use a gluten-free variety if necessary)
  • Optional toppings: avocado or guacamole, salsa, shredded cheddar cheese, sour cream, sliced jalapeno, cilantro, thinly sliced romaine lettuce, lime wedges

Instructions
 

  • Make the spice mix. In a small bowl, mix together all of the ingredients for the fajita seasoning. In a pinch, you can also use a packet of pre-made fajita seasoning.
  • Prepare the fajita mixture. Preheat your air fryer to 380 °F. In a large bowl, mix together the sliced chicken, bell peppers, red onion, olive oil and the fajita seasoning, until the chicken and vegetables are evenly coated.
  • Cook the chicken and vegetables. Transfer the mixture to the air fryer basket and ensure it's in an even layer. Air fry for 15 minutes, tossing halfway through cooking. You may need a couple more minutes of cook time if your air fryer has a smaller capacity than 5.8 qt. Check that your chicken reaches an internal temperature of 165 °F.
  • Serve in small tortillas along with your favourite garnishes. Store any leftovers in a sealed container in the refrigerator and eat within 4 days.
