Prepare the squash. Be sure to trim a small piece off the bottom so it can sit upright on the pan. Roast at 400 °F for 25 minutes.
Prepare the filling. Sauté the vegetables, season, then add the garlic and sausage and cook until the sausage is browned.
Wilt the kale and stir in half of the parmesan cheese. Scoop the filling into the roasted squash halves. Broil for 2-3 minutes to melt the cheese.
