Instant Pot Chicken Burrito Bowls

Step One

Evenly layer the diced chicken in the Instant Pot insert. 

Pour in the broth, then add the rice in an even layer, making sure it's submerged in the broth. Sprinkle the seasoning on top.

Step Two

Step Three

Layer the salsa, black beans and corn on top. Do not stir. Pressure cook on High for 4 minutes, then let the pressure release naturally for 10 minutes.

Step Four

Open the lid, fluff the rice with a fork and mix everything up until the beans and corn are evenly distributed. Season with salt to taste.

Enjoy!

Serve with your favorite garnishes. We like shredded lettuce, red onion, bell pepper, grated cheddar and corn chips.
